- 2 tbsp vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 cup shredded cooked chicken
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- 4 corn tortillas, cut into strips
- 1 avocado, diced
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Heat vegetable oil in a large pot over medium heat. Add onion, garlic, and bell pepper, cooking until softened.
- Stir in diced tomatoes, chicken broth, shredded chicken, cumin, chili powder, and paprika. Bring to a boil, then reduce heat and simmer for 20 minutes.
- While the soup is simmering, fry tortilla strips in hot oil until crispy. Drain on paper towels.
- Add the fried tortilla strips to the soup just before serving. Garnish with diced avocado and fresh cilantro.
- Serve with lime wedges on the side.
