Ingredients

  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 cup shredded cooked chicken
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 4 corn tortillas, cut into strips
  • 1 avocado, diced
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add onion, garlic, and bell pepper, cooking until softened.
  2. Stir in diced tomatoes, chicken broth, shredded chicken, cumin, chili powder, and paprika. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. While the soup is simmering, fry tortilla strips in hot oil until crispy. Drain on paper towels.
  4. Add the fried tortilla strips to the soup just before serving. Garnish with diced avocado and fresh cilantro.
  5. Serve with lime wedges on the side.
