- 1 avocado, diced
- 1 cup quinoa
- 1 1/2 cups water
- 1 tbsp olive oil
- 1 lime, juiced
- 1 tsp honey
- 1/2 tsp chili flakes
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- Cook the quinoa according to the package instructions and keep warm.
- In a bowl, mix the lime juice, honey, chili flakes, olive oil, salt, and pepper. Toss the shrimp in the marinade and let sit for 10-15 minutes.
- Heat a grill pan or skillet over medium heat. Cook the shrimp for 2-3 minutes per side, or until pink and opaque.
