Ingredients

  • 300 g large shrimp, peeled and deveined
  • 1 mango, diced
  • 1 avocado, diced
  • 1 cup quinoa
  • 1 1/2 cups water
  • 1 tbsp olive oil
  • 1 lime, juiced
  • 1 tsp honey
  • 1/2 tsp chili flakes
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Cook the quinoa according to the package instructions and keep warm.
  2. In a bowl, mix the lime juice, honey, chili flakes, olive oil, salt, and pepper. Toss the shrimp in the marinade and let sit for 10-15 minutes.
  3. Heat a grill pan or skillet over medium heat. Cook the shrimp for 2-3 minutes per side, or until pink and opaque.
  4. Divide the cooked quinoa between two bowls. Top with shrimp, diced mango, and avocado.
  5. Garnish with chopped cilantro.
  6. Serve immediately and enjoy the fresh, tropical flavors!
