Ingredients

  • 1 cup lentils, rinsed
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened.
  2. Add lentils, carrot, celery, turmeric, and cumin. Stir to combine.
  3. Pour in the vegetable broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 30 minutes, or until lentils are tender.
