Ingredients

  • 1 cup cooked brown rice
  • 1/2 cup pineapple chunks
  • 1 cup firm tofu, cubed
  • 1 red bell pepper, sliced
  • 1 cup baby spinach
  • 1/2 cucumber, sliced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp maple syrup
  • 1 tbsp sesame seeds

Instructions

  1. In a bowl, mix the soy sauce, sesame oil, rice vinegar, and maple syrup. Toss the tofu cubes in the marinade and let sit for 10 minutes.
  2. Heat a skillet over medium heat. Cook the marinated tofu until golden and crispy, about 8-10 minutes.
  3. Divide the cooked brown rice between two bowls. Top with tofu, pineapple chunks, bell pepper, baby spinach, and cucumber.
  4. Sprinkle with sesame seeds.
  5. Serve immediately and enjoy a fresh, vegan twist on Hawaiian flavors!
