 Yemista are Greek stuffed vegetables filled with a savory rice mixture. Baked to perfection, these flavorful and wholesome dishes are perfect for a hearty meal.

Ingredients

  • 4 large tomatoes
  • 4 bell peppers
  • 1 cup rice
  • 1/2 cup olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup pine nuts
  • 1/2 cup currants
  • 1/2 cup fresh parsley, chopped
  • Salt and pepper

Instructions

  1. Preheat oven to 180°C (350°F). Cut tops off tomatoes and peppers, and scoop out the insides.
  2. In a pan, heat olive oil and cook onion and garlic until softened. Stir in rice, pine nuts, currants, parsley, salt, and pepper.
  3. Stuff tomatoes and peppers with rice mixture and place in a baking dish.
  4. Drizzle with a little olive oil and bake for 45-50 minutes until vegetables are tender. Enjoy!
