- 4 large tomatoes
- 4 bell peppers
- 1 cup rice
- 1/2 cup olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 cup pine nuts
- 1/2 cup currants
- 1/2 cup fresh parsley, chopped
- Salt and pepper
Instructions
- Preheat oven to 180°C (350°F). Cut tops off tomatoes and peppers, and scoop out the insides.
- In a pan, heat olive oil and cook onion and garlic until softened. Stir in rice, pine nuts, currants, parsley, salt, and pepper.
- Stuff tomatoes and peppers with rice mixture and place in a baking dish.
- Drizzle with a little olive oil and bake for 45-50 minutes until vegetables are tender. Enjoy!
