Ingredients
- 600g Zucchini
- 250g Mozzarella
- 120g Potatoes
- 100g Onion
- 3 Eggs
- Salt
- Pepper
- Smoked Paprika
Instructions
- Wash and peel the potatoes and zucchini.
- Grate the vegetables on a coarse grater. For a nice aesthetic effect, you can leave a few slices of zucchini to put on top – just under the mozzarella.
- Let the vegetables rest for 10 minutes, then squeeze the water out of them.
- Add the finely chopped onion to the vegetables and mix.
- Season the vegetable mass to taste and add the eggs. Mix everything thoroughly.
- Place mozzarella slices on top of the casserole.
- Bake in the oven until the mozzarella melts. Enjoy!
