Ingredients

  • 600g Zucchini
  • 250g Mozzarella
  • 120g Potatoes
  • 100g Onion
  • 3 Eggs
  • Salt
  • Pepper
  • Smoked Paprika

Instructions

  1. Wash and peel the potatoes and zucchini.
  2. Grate the vegetables on a coarse grater. For a nice aesthetic effect, you can leave a few slices of zucchini to put on top – just under the mozzarella.
  3. Let the vegetables rest for 10 minutes, then squeeze the water out of them.
  4. Add the finely chopped onion to the vegetables and mix.
  5. Season the vegetable mass to taste and add the eggs. Mix everything thoroughly.
  6. Place mozzarella slices on top of the casserole.
  7. Bake in the oven until the mozzarella  melts. Enjoy!
